What do I do when I’m out of jam, but have strawberries in the fridge or freezer?
I make my own quick stovetop strawberry jam! The canning process is a bit intimidating to me, so this is a much less stressful way to whip up a delicious jam for my toast or sandwiches in less than an hour.
For this recipe, I use strawberries, but you can swap them out with your favorite berry or stone fruit. I’ve used cherries in this recipe before and it was delicious!

Can I use any fruit in this recipe?
Yes! If strawberries aren’t your jam, you can swap them out for our preferred berry or stone fruit.
How long can I store this jam?
I usually keep my jam for about a week in the fridge in a glass jar or airtight container.
Stovetop Strawberry Jam
No canning required! This strawberry jam is ready in less than an hour to top your toast or add to your favorite recipes.
Servings 1.5 cup
Ingredients
454 g (16 ounces) frozen or fresh strawberries
65 g (1/3 cup) granulated sugar
6 g (1 tsp) cornstarch
1 tbsp lemon juice
Instructions
- Add your strawberries, sugar, cornstarch, and lemon juice to a medium saucepan. Mix the ingredients, ensuring the dry ingredients are covering your berries.
- Place saucepan with your berry mixture on your stovetop on medium heat. Stir occasionally for about 15 minutes.
- Let berries break down a bit until the mixture begins bubbling.
- Stir constantly until the mixture thickens. The jam will be ready when it coats and sticks to a spoon.
- Remove from heat. Let mixture fully cool to thicken for about 30 minutes and place in a glass jar or airtight container. Store in refrigerator.
Notes
Jam will keep for up to one week in fridge.
